Getting Ready to Finish Moving Down Here

I am still living out of a suitcase in a hotel right now, but I am going back to Oklahoma City next Friday, rent a moving truck and start moving. My Mom is going to get rid of a lot of stuff for me and I am giving away some of it. I am pretty sure that I can fit all of the stuff I really need in one three axle truck. Right now I am sorting through this power to choose you get in Texas. They have about a hundred power companies down there and you get to pick the one that you want. Here, as in most places you get around three or four different options. I really do not think I can tell that much difference in them so far, but in theory it is nice to have a choice. I will figure it out tomorrow I think and get the power on at the place I found.

  • 8 pcs of corn tortillas 5 inch sizes
  • 6 T. of vegetable oil
  • 1/2 c. of white onion chopped
  • 2 cans of 14 to 15 oz. of juice of whole tomatoes
  • 1 T. of canned chipotle chillies in adobo, chopped
  • 1/4 c. of fresh cilantro chopped plus more for sprinkling
  • 1 t. of salt
  • 2 coarsely chopped garlic cloves,
  • 8 pcs of large eggs

Huevos Rancheros Recipe – METHOD:

  1. Put your oven rack at the middle then preheat the oven to around 200 degree F. Stack now four ovenproof plates over the oven rack to keep it warm.
  2.  Heat about 1 T. of oil over a 10 inch of heavy skillet on a moderate heat and wait until it gets hot but is not smoking. Next stack two tortillas on your skillet then cook this for around 30 seconds. Flip stack over using tongs then cook for another 30 seconds. As the second tortilla starts to cook on the bottom, turn your top tortilla using tongs while keeping the tortillas stacked.
  3.  Flip up your stack again then cook this in similar manner, turning our top tortilla then flipping the stack again for both of the tortillas to soften up and all side slightly puff. Next deflate but avoid turning it crisp or browned. Wrap your tortillas loosely over a foil then keep it warm over the oven. Fry the rest of the tortillas using similar manner, then add 1 T. of oil to your skillet for every batch. No need to clean the skillet.
  4.  Puree your tomatoes together with the juice, cilantro, garlic, chipotle, onion plus salt using a blender until it turns smooth. Slowly add your mixture on a hot skillet, this may spatter then let it simmer while occasionally stirring until your salsa thickens slightly after 10 minutes.
  5. Heat about 1 T. of oil using a 12 inch of heavy non-stick frying pan over moderate to high heat until it gets hot but not smoking, start cracking 4 eggs over the skillet then cook this for around 3 or 4 minutes for some runny yolks or to your desired doneness. Transfer this to a plate and keep it warm and covered. Then cook the rest of the 4 eggs with the other T. of oil in similar manner. Season your eggs with some salt and pepper.
  6.  Spoon about ¼ c. of salsa on every plate then top this with 2 tortillas while overlapping them slightly. Transfer now the 2 eggs to our tortillas on every plate then top again with the rest of the salsa. Sprinkle up with some cilantro.
